Pumpkin Pie

Ingredients

  • 1 1/2 C pumpkin
  • 3/4 C sweetener (less if you use honey)
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 3 eggs
  • 1 1/2 - 2C of milk
  • 1/2 tsp vanilla (optional)

Directions

  1. Preheat the oven to 400
  2. Combine pumpkin, sugar, salt, and spices (we usually use a blender)
  3. Blend in eggs, milk
  4. pour into pastry shell if you're feeling fancy, or a pan (8x8)
  5. Bake at 400 for 10min
  6. Turn the heat down after 10min to 350 and bake for another 40min or until knife inserted halfway between center and edge comes out clean
  7. Serve topped with whipped cream
