Lentil Soup

Ingredients

  • 2 C lentils
  • 1 ham bone w/ 1 lb of meat (or something similar)
  • 1 C chopped onions
  • 1 C chopped celery + leaves
  • 1 C chopped carrots
  • 1 clove garlic (minced)
  • 1 bay leaf
  • 1/2 tsp thyme
  • salt + pepper

Directions

  1. Cook lentils and ham in water for 3-4 hours (or until soft)
  2. Mix in the rest of the ingredients and cook for 1-2 hours

Notes

I like to add shredded kale to my lentil soup
