Green Bean Casserole

Ingredients

  • 2 lbs fresh green beans
  • 4 slices bacon (cut into 1/4 inch pieces)
  • 3 cloves garlic (planed)
  • 1/2 whole large onion (chopped)
  • 4 Tbl butter
  • 4 Tbl flour
  • 3 C milk
  • 1 1/2 tsp salt
  • Black pepper
  • 1/8 tsp cayenne pepper (optional)
  • 1 C grated sharp cheddar cheese
  • 1 C panko or breadcrumbs (1 1/2 slices bread in cuisanart w/ 2 Tbl melted butter

Directions

  1. Preheat the oven to 350
  2. Cut green beans in half
  3. Blanch the green beans: drop them in lightly salted boiling water, and allow green beans to cook for 3-4 min. Plunge in abowl of ice-cold water to stop the cooking process. Set aside.
  4. Add bacon pieces to a skillet over medium heat, and cook for 2 min
  5. Add onion and garlic and continue cooking for 3-5min or until bacon is done
  6. In a separate skillet, melt butter over medium heat
  7. Sprinkle in flour and whisk and cook for 1-2 min
  8. Pour in milk, and cook until sauce thickens (about 2 min)
  9. Add seasonings and grated cheddar
  10. Combine green beans and sauce.
  11. Pour into a baking dish and top with crumbs
  12. Bake for 30min
