Green Bean Casserole

Ingredients
- 2 lbs fresh green beans
 - 4 slices bacon (cut into 1/4 inch pieces)
 - 3 cloves garlic (planed)
 - 1/2 whole large onion (chopped)
 - 4 Tbl butter
 - 4 Tbl flour
 - 3 C milk
 - 1 1/2 tsp salt
 - Black pepper
 - 1/8 tsp cayenne pepper (optional)
 - 1 C grated sharp cheddar cheese
 - 1 C panko or breadcrumbs (1 1/2 slices bread in cuisanart w/ 2 Tbl melted butter
 
Directions
- Preheat the oven to 350
 - Cut green beans in half
 - Blanch the green beans: drop them in lightly salted boiling water, and allow green beans to cook for 3-4 min. Plunge in abowl of ice-cold water to stop the cooking process. Set aside.
 - Add bacon pieces to a skillet over medium heat, and cook for 2 min
 - Add onion and garlic and continue cooking for 3-5min or until bacon is done
 - In a separate skillet, melt butter over medium heat
 - Sprinkle in flour and whisk and cook for 1-2 min
 - Pour in milk, and cook until sauce thickens (about 2 min)
 - Add seasonings and grated cheddar
 - Combine green beans and sauce.
 - Pour into a baking dish and top with crumbs
 - Bake for 30min
