Corn Bread

Cook time: 30min

Ingredients

  • 1 C course yellow corn meal
  • 1 C whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1/2 C honey or maple syrup
  • 1/4 C oil/shortening
  • 2 1/4 milk (soy milk in the original)

Directions

  1. Preheat oven to 350
  2. Mix ingredients into a thin batter
  3. Pour into a lightly oiled 9x9 pan (10x13 for double)
  4. Bake for 30min or until top is springy when touched
