Ingredients
- 3/4 flour
 - 3 Tbs sugar
 - 1/2 tsp grated lemon peel
 - 6 Tbs butter
 - 1 slightly beaten egg yolk
 - 1/4 tsp vanilla
 - 3 8oz packages of cream cheese (softened at room temp)
 - 1/4 tsp vanilla
 - 1/4 tsp grated lemon peel
 - 1 C sugar
 - 2 Tbs flour
 - 1/4 tsp salt
 - 2 eggs
 - 1 egg yolk
 - 1/4 C milk
 
Directions
- Crust: combine the first 3 ingredients
 - Cut in the butter until crumbly
 - Add egg yolk and vanilla and mix well
 - Pat 1/3 of the dough on the bottom of an 8inch spring-form pan (sides removed)
 - Bake at 400 for 7 min (or until golden)
 - Butter the sides of the pan, and attached to bottom when cool
 - Pat remaining dough on the sides of the pan 1 3/4 inch up the sides
 - Filling: beat cream cheese until creamy
 - Add vanilla and lemon peel
 - In a separate bowl, mix sugar, flour, and salt
 - Gradually blend dry ingredients into the cheese
 - Add egg yolk and eggs, and beat until blended
 - Gently stir in milk
 - Pour into pan, and bake at 400 for 10 min.
 - Then reduce heat to 250 and continue to bake for 1 1/2 hours
