Cheesecake (supreme)

Ingredients

  • 3/4 flour
  • 3 Tbs sugar
  • 1/2 tsp grated lemon peel
  • 6 Tbs butter
  • 1 slightly beaten egg yolk
  • 1/4 tsp vanilla
  • 3 8oz packages of cream cheese (softened at room temp)
  • 1/4 tsp vanilla
  • 1/4 tsp grated lemon peel
  • 1 C sugar
  • 2 Tbs flour
  • 1/4 tsp salt
  • 2 eggs
  • 1 egg yolk
  • 1/4 C milk

Directions

  1. Crust: combine the first 3 ingredients
  2. Cut in the butter until crumbly
  3. Add egg yolk and vanilla and mix well
  4. Pat 1/3 of the dough on the bottom of an 8inch spring-form pan (sides removed)
  5. Bake at 400 for 7 min (or until golden)
  6. Butter the sides of the pan, and attached to bottom when cool
  7. Pat remaining dough on the sides of the pan 1 3/4 inch up the sides
  8. Filling: beat cream cheese until creamy
  9. Add vanilla and lemon peel
  10. In a separate bowl, mix sugar, flour, and salt
  11. Gradually blend dry ingredients into the cheese
  12. Add egg yolk and eggs, and beat until blended
  13. Gently stir in milk
  14. Pour into pan, and bake at 400 for 10 min.
  15. Then reduce heat to 250 and continue to bake for 1 1/2 hours
