Bread Pudding

Ingredients

  • 3 eggs
  • 2 C milk
  • 1/3 C sweetener (honey, maple syrup, or brown sugar)
  • 1/2 tsp vanilla
  • 3 Tbl butter (optional)
  • 2 C bread cubes
  • 1/3 C raisins or other dried fruit (chopped)
  • 1/2 C sunflower seeds, sesame seeds or nuts (optional)
  • dash of cinnamon and/or nutmeg (optional)

Directions

  1. Preheat oven to 350
  2. Beat/blend eggs, milk, sweetener, vanilla, and butter
  3. Stir in bread, fruit, and seeds
  4. Stir in spices or sprinkle on top
  5. Pour into a pan (2-quart casserole or 11x13 pan if doubled)
  6. Bake at 40-50min
