Lentil Soup
Ingredients
- 2 C lentils
 - 1 ham bone w/ 1 lb of meat (or something similar)
 - 1 C chopped onions
 - 1 C chopped celery + leaves
 - 1 C chopped carrots
 - 1 clove garlic (minced)
 - 1 bay leaf
 - 1/2 tsp thyme
 - salt + pepper
 
Directions
- Cook lentils and ham in water for 3-4 hours (or until soft)
 - Mix in the rest of the ingredients and cook for 1-2 hours
 
Notes
I like to add shredded kale to my lentil soup
